  1. Make ready 250 gms mutton on bones
  2. Prepare For Marination:
  3. Prepare 1 Tbsp red chilli powder
  4. Take 1/2 tsp turmeric powder

  7. Make ready 1 medium size onion chopped
  8. Prepare 1 medium size tomato chopped
  9. Take 1 bay leaf
  10. Take 1 whole red chilli
  11. Prepare 1 Tbsp red chilli powder
  12. Take 1/2 tsp turmeric powder
  13. Make ready 1/2 tsp coriander powder
  14. Get 1/2 tsp garam masala powder
  15. Take 1/2 tsp cumin seeds
  16. Get 1 tsp ginger - garlic crushed
  17. Prepare 1 spring curry leaves
  18. Make ready 1 sprig fenugreek leaves chopped
  19. Make ready 1 sprig coriander leaves chopped
  20. Prepare 3 Tbsp ghee
  21. Prepare 1 tbsp mustard oil
  22. Get As per taste Salt
Steps to make Mutton Ghee Roast:
  1. For marination - In a bowl marinate the mutton with Red chilli powder, turmeric powder and salt and set aside for 20 mins.
  2. Pressure cook the mutton with 1/4 cup water for 4 whistles on slow flame and set aside.
  3. For Roast - in a wok heat ghee, add whole red chilli, bay leaf, cumin seeds, curry leaves and let it splutter. Add crushed garlic-ginger and fry till the red smell leaves.
  4. Add chopped onion and stir until soft. Add chopped tomatoes and fry till mushy. Add the marinated mutton.
  5. Add red chilli powder, turmeric powder, coriander powder, garam masala powder, salt and stir well. Add fenugreek leaves, coriander leaves and stir well. Mix everything well so that masalas are cooked well with the mutton.
  6. Serve hot with Naan or Roti or Paratha.
