Spread the shredded cheese over the other half. Transfer the onions and mushrooms to bowl and set aside.

Add mushrooms, salt, pepper, garlic powder and chives. Saute until heated through and mushrooms have reduced slightly. When the dark egg white windows start to turn yellow/white, spread mushrooms and onions over half of the egg mixture and cheese over the other half. Cover the pan and wait five minutes.

Steps to make Mushroom and White Onion Omelette:
  1. In a bowl beat the egg(s) then add a pinch of salt.
  2. Slice white onions and mushrooms.
  3. Heat the pan, sautée mushrooms and white onions add some pepper; till the mushrooms turn slightly brown.
  4. On the other pan, pour the beaten egg(s) add turmeric then put the sauteed white onions and mushrooms on top on either side then add some basil then cover the sauteed mushrooms with the other side. Then serve.

When the dark egg white windows start to turn yellow/white, spread mushrooms and onions over half of the egg mixture and cheese over the other half. Cover the pan and wait five minutes. When the cheese is melted and the egg is no longer runny, flip the cheese half over onto the mushroom half. Sprinkle half each of the caramelized onions and mushrooms over half of the omelette and fan half of the avocado slices on top. Fold the unfilled half over the filled half.
