  2. Add the eggs, turmeric powder and red chilli flakes. Fry for 1-2 minutes till the eggs are well fried. Then add the rice and salt.
  3. Combine everything well and saute for 2 minutes more. When done, add the coriander leaves and serve with any side dish or simply as it is.

You want to avoid freshly cooked rice because it is still moist and steamy, which may yield fried rice with a mushy texture. Toss well to combine, then press down evenly into skillet.
