The ingredients needed to make Black Tea Marinated Eggs & Tofu:
  1. Prepare 8 eggs
  2. Get 1 pack hard tofu
  3. Prepare 1 tsp peppercorn
  4. Make ready 1 tbsp sichuan peppers
  5. Prepare 25 g cubed rock sugar
  6. Get 2 slices crushed ginger
  7. Make ready 10 g cinnamon
  8. Take 4 star anise
  9. Get 4 bay leaves
  10. Prepare 4-5 black tea bags
  11. Get 80 ml dark soy sauce
  12. Get 40 ml soy sauce
  13. Prepare 1 tbsp salt
  14. Get 30 g rice wine/cooking wine
  15. Make ready 1 liter water

It's the appearance that often turns Westerners away from these simple eggs, but. I did a barbecue marinated chicken thigh and it was delicious. Marinated or seasoned eggs is one of my favorite ways to eat soft boiled eggs (and even hard boiled eggs). I've tried different versions of seasoned eggs - pickled eggs and Chinese tea eggs being two that I really like.

Steps to make Black Tea Marinated Eggs & Tofu:
  1. Boil the eggs (medium heat) for about 5 minutes. Cool it down with cold water, let it sit while preparing the pot of marinade
  2. Put everything into the 1 litre of water aside from the cooking wine, eggs, & tofu. If you have a bag to put everything to cook, it will be easier to remove all the spices. Cook for 15 minutes over medium heat
  3. Using a spoon, make crack patterns to the shells of the eggs so that when you peel it later, it has pretty zigzag patterns and the marinade absorbs nicely into the eggs. Cut up the tofu into small strips or pieces to also be soaked in the marinade.
  4. Remove all the spices from the marinade, put the eggs and tofu into the pot of marinade and cook with the tea bags for about 10 minutes.
  5. Remove the tea bags and turn off the heat. Add in the cooking wine and stir to have it blended. The eggs & tofu should sit in the marinade for at least 6 hours before it is ready to be served.
  6. Recommend peeling the egg shells after 6 hours. I prefer enjoying the marinated eggs & tofu cold. Some people like to reheat the bowl before serving. Enjoy!
