Fattoush is essentially a "bread salad," said to have originated in Northern Lebanon. Lebanese farmers would fry leftover pita scraps in a bit of olive oil for extra flavor.

  2. Get 1 medium cucumber

This recipe uses two unusual ingredients: sumac and purslane. Sumac, usually sold ground, is ground red berries and used in Middle Eastern, particularly Lebanese, cooking. Purslane is succulent with a lemony flavor, and makes a nice salad green. Gradually add oil, whisking constantly, until well.

Instructions to make Fattoush Salad:
  1. Cut your salad and wash with veniger and set a side
  2. Wash your veggies and cut
  3. Use knife or scissors to cut shawarma bread into square or any shape you like
  4. Heat little oil in a pan and fry the bread till golden brown
  5. For the dressing:mix olive oil,lemon juice,garlic,sumac,mustard,salt and seasoning
  6. Arrange the veggies on the plate and drizzle salad dressing,arrange bread on top and serve

Purslane is succulent with a lemony flavor, and makes a nice salad green. Gradually add oil, whisking constantly, until well. Fattoush is also meant to be a clean-out-the-crisper-drawer sort of situation, typically featuring a base of lettuce, cucumbers, tomatoes, plus any extra veggies that you may have on hand. It's typically tossed with a simple lemon dressing and tons of fresh mint, whose flavors brighten up this salad beautifully. Fattoush is basically a Mediterranean fried bread salad that typically includes lettuce, tomatoes, cucumbers, radishes and fried pieces of pita bread.
