For the raspberry bavarois, heat the milk, raspberry purée and lime juice in a large pan. Using an electric mixer, whisk the egg yolks and sugar until pale and doubled in volume.

  7. Once the raspberry mix has started to set, fold it into the cream pour into the moulds and set in the fridge

For the raspberry bavarois, heat the milk, raspberry purée and lime juice in a large pan. Using an electric mixer, whisk the egg yolks and sugar until pale and doubled in volume.
