  2. Take 250 grams smooth cottage cheese

  7. Prepare 250 grams cheddar cheese
  8. Take 1 packages puff pastry
  9. Take salt

  1. Preheat oven to 360°F
  2. Saute the spinach in a pan and set aside
  3. Grate the mozzarella cheese and the cheddar but keep them separate
  4. Whisk eggs and cottage cheese
  5. Add nutmeg and spinach to egg mixture
  6. Add cubed feta cheese
  7. Add mozzarella cheese to mixture and half of cheddar cheese and stir
  8. Grease oven proof dish and lay puff pastry
  9. Pour egg mixture into the oven proof dish
  10. Sprinkle the rest of the cheddar cheese
  11. Sprinkle thyme over mixture
  12. Add to preheated oven for 20-30 minutes. The quiche is ready when it's golden-yellow and when poked, there is no moisture
  13. Remove from oven and let it cool before serving
