  15. Make ready 2 cups basmati rice
  16. Take 2-3 bay leaves
  17. Take 2-3 green cardamoms
  18. Get 2-3 smalll sticks of cinnamon
  19. Get 1-2 black cardamoms
  20. Prepare 5-6 Black peppers
  21. Get 4-5 cloves
  22. Get 2 tsp lemon juice
  23. Prepare 1 Tbsp curd
  24. Make ready 2 Tbsp Desi ghee
  25. Take as required Water
  26. Take as per taste Salt
  27. Make ready 1 tsp Mint powder
  28. Get 1 onion sliced for garnish
  29. Make ready 4-5 cashews
  30. Take as required Chopped green coriander leaves

Instructions to make Hyderabadi veg yakhni pulao:
  1. First of all, we have to make a bouquet of Garni. you have to take Cumin seeds, fennel seeds, coriander seeds, and crushed ginger and garlic in a muslin cloth and tie it tightly.
  2. Cut the onions in splices also cut the remaining vegetables indices.
  3. Heat a sufficient quantity of water. Add 1tsp salt and 1tsp of black pepper powder to it. Then add all the vegetables along with a bouquet of Garni in it. And cover the pan. cook the veggies till they are half done.
  4. Squeeze the bouquet of garni and discard away the spices. Through a strainer strain the stock/yakhni and keep the veggies aside. Also, keep the vegetable stock aside. Only take 2 or desired quantities of stock and the remaining stock you can store and add to soups, Dal, or any type of curry.
  5. Rinse and wash basmati rice and soak for 30mins. After 30mins drain all the water and keep the rice aside.
  6. Heat 2 Tbsp of ghee in a pan or cooker. Add whole spices and fry.
  7. Add sliced onions and fry till they are golden.
  8. Also add tomatoes.
  9. Add drained basmati rice.stir well.
  10. Now add half cooked veggies and sufficient quantity of stock.
  11. Add salt required because we have already added salt to the yakhni.
  12. Now add curd and some garam masala powder to it.
  13. Cover and cook it. For garnish take desi ghee in a pan and add sliced onions and cashews. fry them till the onions become golden brown.
  14. Garnish the pulao with onions, cashews and coriander leaves.
