I made milk pudding and strawberry coulis, layered them both, it tasted terrific! I thought this low carb strawberry chia pudding with almond milk made a nice breakfast at work.

Steps to make Strawberry milk pudding:
  1. Take 500ml milk in a heavy bottom pan, give it one boil, then reduce the flame and add custard powder dissolved in 2tbsp milk slowly to the boiling milk & wisk it continuously so that no lumps are formed, then add orange zest and mix well, once the custard thicken add 1tsp butter & switch off the gas.
  2. Grease a square pan with butter pour the hot custard in the pan, cover it with cling wrap such that the wrap touches the custard & let it set on room temperature for atleast an hour.
  3. In another pan prepare strawberry jelly as per the instructions on the packet, just add lesser water than given in the instructions, this will give a thicker jelly.
  4. Once the jelly is done, bring it to room temperature by storing continuously, then pour this over set custard and refrigerate it for atleast 5-6 hours or till set firmly.
  5. Once set cut it into desired pieces, garnish with fresh fruits & serve.

I was looking for an easy treat to make this weekend. I thought this low carb strawberry chia pudding with almond milk made a nice breakfast at work. Pour in the almond milk, vanilla extract, chia seeds, and strawberries, and mix until well combined. Spoon the pudding into desired serving dish and top with sliced bananas and diced strawberries. This pudding reminds us of Devonshire tea: baked fruit takes on a jam-like quality while vanilla custard and small milk buns round things out.
