The ingredients needed to make Pani Puri Chaat:
  1. Make ready 50 Sooji puris (homemade or store bought)
  2. Prepare 1 bunch Pudina/ mint
  3. Prepare 1 bunch Coriander leaves
  4. Take 4-5 Green chillies
  5. Get 1 cup Boiled black chana or sprouted moong or chickpeas
  6. Get 1/2:cup Tamarind pulp
  7. Make ready 2 cup Jaggery
  8. Prepare 3 Boiled potatoes medium
  9. Prepare 6 cups Cold Water
  10. Prepare As per taste: black salt, chilli powder, mango powder
  11. Take As per taste cumin powder, fennel powder,
  12. Take As per taste: ginger powder, coriander powder, Black pepper,
  13. Take 2 tablespoons Chopped coriander
  14. Get 2 tablespoons Lemon juice
  15. Get 1 tsp Cooking oil
  16. Prepare to taste Salt
  17. Prepare as required Khara Boondi for garnish
Instructions to make Pani Puri Chaat:
  1. Wash the green leaves and roughly chop them. Chop the chillies. In a blender jar, add all, along with oil, lemon juice, a little water and blend to a paste.
  2. Add cold water as per desired consistency and blend again. Strain the mixture in a bowl. Add all the spices as per taste. Stir well. Now the green spicy pudina water is ready.Keep in fridge.
  3. To make sweet tamarind water, mix jaggery, tamarind pulp and add 2 cups cold water. Mix well till Jaggery is dissolved. Strain the mixture. Add the above-mentioned spices as per along with cold water as per taste. Keep in fridge.
  4. To make potato and chana filling for puris, mash the boiled and peeled potatoes well with a masher. Add boiled chana/ sprouted moong and chopped coriander leaves and mix well. Add spices as per taste. Make them into small balls for easy stuffing.
  5. Assemble the green water, garnish with khara Boondi, tamarind water and potato filling in serving bowls. Keep puris in a basket. To serve, break puri in center, add some potato balls stuffing, pour spoonfuls of both the prepared waters and serve the yummylicious Paani Puri chaat!
