Pierce the bottom of the pastry with fork, line with greaseproof paper and fill it with baking beans. Place it on a baking tray and bake it for 20-25 minutes. After remove the paper and the beans and bake it for another 5minutes.
  2. Meanwhile, cut the leek and cook it with the melted butter for 15minutes.
  3. Whisk the cream, creme fraiche, eggs, thyme and seasoning together in a bowl. When the pastry is baked trim off the edge until it is warm. Put the leek on the bottom and pour the the cream mixture over it.
  4. Bake it for 45 minutes until the mixture set and is lightly golden. Set aside to cool at least 15 minutes before serving.
