  3. Add 1 cup of veg stock and stir until the rice has absorbed the stock. Repeat 1 cup at a time until the rice is soft and creamy about 30 minutes.
  4. Next add the baby spinach and stir until the spinach has wilted. Next add the 2 other tbls butter and the cup of parmesan grated cheese stir in and serve.

Stir in the parsley and half the parmesan. Scatter the spinach over the risotto. Remove from the heat and stir in the lemon zest and Parmesan. Rather than simply stirring in wilted spinach at the end, like so many recipes call for, this one includes a neat trick: First, you wilt spinach in a pot of water, and then Add to Meal Planner.
