The ingredients needed to make Bharli Vangi [ Stuffed brinjal / stuffed eggplant]:
  1. Take 5 Brinjal/ eggplant
  2. Make ready 1 tsp mustard seeds
  3. Prepare 2 tbsp chopped coriander leaves
  4. Make ready as needed water
  5. Make ready as needed oil
  6. Prepare For Stuffing:
  7. Take 1/4 cup roasted peanuts
  8. Take 1 tbsp coriander seeds
  9. Prepare 2 tsp chana dal
  10. Take 1 tsp jeera/cumin seeds
  11. Take 1/4 tsp fenugreek
  12. Take 12 kashmiri red chilli [ adjust according to spice tolerance]
  13. Make ready 1 sprig curry-leaves
  14. Get 1/4 cup grated coconut
  15. Take 1/4 tbsp sesame seeds
  16. Take 1/2 tsp turmeric
  17. Make ready 1 tbsp powdered jaggery
  18. Get as needed tamarind a small ball
  19. Make ready to taste salt
  20. Make ready as needed oil

Serve Bharli Vangi along with Panchmel Dal. Heat oil in a big thick bottomed kadai and arrange the stuffed eggplants side. Since the title itself suggests, bharli ( stuffed) and Vangi ( brinjals), is actually an eggplant curry recipe in which baby eggplants are packed with Bharwan Baingan (Stuffed Eggplant) is actually an exclusive amazing recipe. Within this recipe, baby Eggplants are slit and loaded with hot and spicy.

Instructions to make Bharli Vangi [ Stuffed brinjal / stuffed eggplant]:
  1. Stuffing : add oil in pan and roast coriander, chana dal, jeera,fenugreek,red chilies and curry leaves. when it starts to turn brown add coconut and roast until golden brown and set it aside to cool. Dry roast sesame seeds and lightly heat the peanuts. Grind the coconut mixture, sesame seeds, peanuts, turmeric, jaggery,tamarind and salt into a thick paste. Add water if needed.
  2. Stuffing Brinjal: wash and pat dry the brinjal. Make a '+' like slit on the top by keeping the stem intact. Stuff the brinjal with the prepared mixture. [ keep 1/4th of the stuffing aside and stuff the rest]
  3. Preparing Bharli Vangi : Heat oil in a pan and fry the stuffed brinjal by flipping occasionally. when all the sides get fried enough add the remaining stuffing mix into it and coat the brinjal well. Add water into this and cook covered in low flame for 20-25 minutes, stirring occasionally. adjust salt. Cook until the brinjals are well cooked. Adjust the gravy consistency buy adding hot water. cook until oil separates. Garnish with coriander leaves.
