Instructions to make Spaghetti with Smoked Cheese and Tomato Sauce (Vegetarian):
  1. Finely slice the onion and the garlic. Grate the cheese and, optionally, some lemon zest.
  2. Fill a pot with water, add salt and bring to a boil. Cook the spaghetti until it's al dente.
  3. While the spaghetti is cooking, coat a pan with olive oil. Fry the onion and garlic until the onion softens up and add a dash of balsamic vinegar. Then, add the tomato sauce to the pan and, optionally, some tomato paste. Add herbs and spices (I used salt, pepper, cayenne pepper, basil, chives and thyme). Optionally, add some lemon zest, to give the meal a more lively flavour. Simmer for 3-5 minutes and then add the grated smoked cheese. Simmer and keep stirring until the cheese melts.
  4. Turn off the heat and serve the dish. Decorate with basil or chives. Grate some of the smoked cheese over the spaghetti, also for decoration. Enjoy your meal! ๐Ÿ™‚
