  1. Take 1 ready bought shortcrust
  2. Take 3 eggs
  3. Prepare 300 g frozen vegetables

  5. Get 1 handful frozen peas

  7. Make ready 250 ml single cream
  8. Prepare 1 handful grated cheddar cheese

Instructions to make Vegetable quiche:
  1. Slice the mushrooms and leek. Heat up some oil, add them and season with salt and pepper. Fry over a medium heat until soft. At the same time boil the frozen vegetables for about 4min.
  2. While everything is frying or cooking, you can prepare the cream and egg mix. Just mix the eggs, cream and cheese and add some seasonings and the tarragon. When the vegetables are done mix them together. When the broccoli or cauliflower is too big, cut them a bit smaller.
  3. Preheat the oven to 200 degrees. Grease the form and put in the shortcrust. Add the vegetables and spread evenly. Pour in the egg mix. Cook in the oven for 35-40min. After you turned the oven off let it rest for 5 min in the warm oven. Enjoy <3
