Get For rice :
Take 6 cup water
Make ready 1 pods cardmom
Make ready 2 cloves

Take 1 tbsp ghee

Prepare 1 sliced onion
Prepare 1 chopped potato
Take 1 chopped carrot
Prepare 6 chopped beans
Take 6 florets cauliflower
Make ready 3 tbsp peas
Make ready Half chopped capsicum
Get 1 tbsp ginger garlic paste
Make ready 2 tbsp biryani masala
Prepare 1/4 tbsp red chilli powder
Make ready 1 cup curd
Take As required Chopped green coriander
Prepare For layering :
Take 4 tbsp saffron water
Make ready 2 tbsp ghee
Get 2 tbsp finely chopped coriander
Get 3 pinches biryani masala
Instructions to make Veg mataka biryani:
Preparing rice : take a big vessel and add water. Mix all the spices like salt, cardmom,ghee, cloves, cinnamon and bay leaf and boil it till it absorb the flavour. And make sure to soak rice before at least 25 minutes.
Once the water is boiling then add basmati rice and stir well until rice is half cooked it takes almost 6-7 minutes. And drain of the rice and keep aside for a while.
For preparing gravy : Take a pressure cooker and add chopped potato, cauliflower, capsicum, beans, carrots and boil it for 2 whistles.
Drain of the vegetable from water and keep a side.
Now after sometime take a pan and add oil, ghee add spices like cardmom, cloves, bay leaf, cinnamon, cumin seeds, asafoetida and saute it.
Later add slices onions and garlic ginger paste and saute it till it turns to golden brown.
After that add all the boiled vegetables like potato, carrots, cauliflower, capsicum, beans, peas and saute it for 3 minutes.
Now add biryani masala, red chilli powder, salt and combine well. Also add green chopped coriander and stir it.
Next add 1 cup of curd and stir well for 3-4 minutes.
Layering biryani in matka : Take a small clay pot and grease it with ghee.
Make a layer of prepared gravy of biryani. And Sprinkle chopped coriander.
After that make a layer of half cooked rice. And sprinkle chopped coriander, saffron water, biryani masala and ghee.
And cover it with aluminum foil. And cook it in low flame for 20 minutes.
Before opening the foil, rest it for sometime almost 15 minutes. and finally matka biryani is ready. Enjoy with raita, papad.
