  1. Take 2.5 cups flour
  2. Make ready 1/2 cup double milk
  3. Prepare 1/4 cups sugar
  4. Prepare 1/4 cups
  5. Take 1/4 cups melted butter (unsalted)
  6. Make ready 1 tbsp active dry yeast
  7. Take 1 egg
  8. Take Lemon zest of two lemons (optional)
  9. Make ready 1 tsp salt
  10. Make ready 2 tsp normal milk
  11. Prepare Starter
  12. Prepare 3 tbsp milk
  13. Make ready 3 tbsp water
  14. Take 2 tbsp flour

To serve, split the scones, spread with butter and your favourite jam, and optionally top with a spoonful of thick whipped cream. Canned coconut milk makes a wonderful nondairy option! Refrigerate Before Baking: Remember, cold dough is a successful dough. If you like, brush scones with a little beaten egg or milk before they go into the oven.

Steps to make Milk scones:
  1. Mix all the starter ingredients in a saucepan and beat with a whisk until all the lumps are dissolved.
  2. Place over low heat and keep mixing with the whisk until the whisk forms line at the bottom. Switch off and keep mixing until it is well mixed. Allow it to cool to room temperature
  3. In a separate cup add the half cup of warm milk and a tablespoon of sugar together with the yeast. Mix well and leave it to rest for 5 minutes to allow the yeast to proof.
  4. This is how it should look after 5 minutes
  5. Mix all the ingredients including the yeast and the starter in a bowl. Mix it using your hands or a mixer on dough hook. If using a mixer, start with level two.
  6. When it starts coming together, reduce the speed to allow all the ingredients to incorporate properly
  7. You will know when it's done when dough is not sticking on the bowl. Also if you pock the dough with your finger it begins to rise back.
  8. Cover the dough with cling film and allow it to rest for 30 minutes to an hour. The dough will have risen.
  9. Make 8-10 small balls of the dough and place them on a greased plate
  10. Leave it to rest for at least 30 minutes.
  11. Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius
  12. After the dough has rested, brush the rolls with egg wash and put some sesame seeds on top.
  13. Bake in the oven for 20-25 minutes. You know they are done when you insert a tooth pick and it comes out clean. Ensure you place some water in the oven so that the scones can retain some moisture.
  14. Allow cooling on the baking tin for 10 minutes
  15. Then transfer them to a cooling rack. Serve when cooled. Enjoy 😉😉😉

Refrigerate Before Baking: Remember, cold dough is a successful dough. If you like, brush scones with a little beaten egg or milk before they go into the oven. Scones are best served warm and fresh, split open, and topped with thick homemade strawberry or raspberry. Milk, use whatever kind you have in the fridge. For vegan scones: substitute vegan butter, vegan yogurt, flax egg, and replace heavy whipping cream with coconut milk.
