  13. Make ready 200 grams bamboo shoot, cut into juliennes
  14. Take 2-3 tbsp. oil
  15. Make ready 1 onion, chopped
  16. Prepare 1 tsp. ginger, chopped
  17. Prepare 1 tsp. garlic, chopped
  18. Take 2 green chilies, chopped
  19. Prepare 1 tomato, chopped
  20. Take 2 tbsp. coriander roots, chopped
  21. Take to taste salt
  22. Take 1 tsp. turmeric powder
  23. Take 1 tbsp. coriander leaves, chopped
  24. Take 1 tsp. lime juice
Steps to make Bamboo Shoot Stir Fry:
  1. Boil the bamboo shoots along with 1/2 tsp. turmeric powder till tender. Drain and keep aside.
  2. Heat oil in a pan. Add onion, ginger, garlic & green chilies. Saute till light brown. Add the tomatoes and saute for 1-2 minutes.
  3. Now add the boiled shoots, coriander roots, salt, remaining turmeric powder and 3-4 tbsp. ground spice. Mix well and cook, covered on a low flame till done. Sprinkle some water at intervals.
  4. Add lime juice & garnish with coriander leaves.
  5. Serve as a side dish with sambar rice, curd rice, dal-chawal, chapati or paratha.
