  1. Take 450 g skinless cod (or sea bass)
  2. Prepare 1/2 teaspoon salt
  3. Take 1/4 teaspoon pepper
  4. Make ready 2 tablespoons cooking fat
  5. Prepare 1/4 onion
  6. Get 2 teaspoons grated fresh ginger
  7. Prepare 2 cloves garlic
  8. Take 180 g button, chestnut or potabello mushrooms
  9. Get 100 g roasted red peppers
  10. Take Optional: sweet potato
Steps to make Cod with mushroom and red pepper:
  1. Preheat oven to 180°C. Cut the fish into small pieces and season with salt and pepper. Bake for 12-15 minutes.
  2. While fish is cooking, put cooking oil into frying pan and roast red pepper.
  3. In another frying pan, cook chopped onion until it's translucent (2-3 minutes). Add the ginger and stir for 30 seconds. Add garlic and stir for another minute. Add the mushrooms and continue to cook, stirring for 1-2 minutes. Add roasted pepper, salt and pepper and stir for another 2 minutes.
  4. Place fish and vegetable on your plate and enjoy your meal :)
