  18. Prepare 2 tsp jaggery
  19. Prepare Salt

Vegetables in Thai Red Curry with Sweet Potato Noodles. Add little red colour if required. This is a curry with watery gravy. Goes bery well with plain white rice.

  1. Take all ingredients for Thai curry paste(as mentioned above in ingredient section) and blend to a smooth paste.
  2. In a pan take oil + Thai paste and sauté well for 2 minutes.
  3. Now add vegetables of your choice (carrot, potato, capsicum, paneer) and boil in low flame for 10 minutes
  4. Now add coconut milk to it and boil in sim for 7 minutes. Garnish with cilantro leaves and serve with rice.
