Hello everybody, hope you’re having an amazing day today. Today, we’re going to make a special dish, vegetable paella. It is one of my favorites. For mine, I am going to make it a little bit unique. This will be really delicious.

Vegetable Paella is one of the most favored of recent trending foods on earth. It’s easy, it’s quick, it tastes delicious. It’s enjoyed by millions every day. Vegetable Paella is something which I have loved my whole life. They are nice and they look wonderful.

The ingredients needed to make Vegetable Paella:
  1. Take 1 Eggplant
  2. Take 1 can artichoke
  3. Get 1 can black olives
  4. Take 1 jar green olives
  5. Take 1 small package of cherry tomatoes
  6. Take 1 sweet pepper
  7. Make ready Half an onion
  8. Get Half a pound of string beans
  9. Get 1 tbls tumeric
  10. Take 2 cups vegetable stock or 2 cubes of vegetable bouillon to 2 cups of water
  11. Take 1 and 1/4 cup of rice
  12. Prepare Fresh parsley
  13. Take 2 small dried bay leaves
  14. Take Fresh thyme
  15. Make ready 4 cloves garlic
  16. Prepare 2 packages sazon flavoring
  17. Prepare 1 teaspoon oregano
  18. Take Half a lemon
  19. Make ready 2 teaspoons corn oil
Steps to make Vegetable Paella:
  1. Cut up garlic cloves and save half of the portion for rice and the other half for the vegetables
  2. Dice onion and peppers and set aside
  3. Cut up all other vegetables (in proportion to the size you want them) and combine in a large bowl
  4. Set a Paella pan or wok to a medium flame. Add one teaspoon of oil. Add garlic and onion then cook it for approx. 1-2 minutes
  5. Add all vegetables (including olives) except the pepper. Season vegetables with sazon. Mix well and then cover the pan for 5 minutes.
  6. After 5 minutes remove vegetables from pan and set aside
  7. Add the second teaspoon of oil to the pan. Then add the next two cloves of garlic. Then add the red pepper
  8. Place two vegetable bouillons in the pan (or 2 cups of vegetable stock) and then add 2 cups of water. Season with tumeric, paprika, oregano, thyme and bay leaf. Stir well
  9. Squeeze half a lemon over liquid
  10. Once the water has a low boil, add 1 and 1/4 cup of washed rice, and parsley. Mix ingredients well.
  11. Allow some of the water to boil off and then cover the rice. Let cook for 10 minutes.
  12. Place all vegetables on top of the rice. Cover and cook for 8 minutes.
